What could be better than meatballs cooked in a rich tomato sauce? Meatballs with a melted cheddar surprise inside!

Combine your choice of mincemeat, onion and dried herbs (we love oregano). Divide into small balls and wrap around a cube of cheddar. Chill for 20 minutes then fry in a pan until browned. Add your tomato sauce and simmer for 30 minutes. Enjoy the cheese oozing when you cut into the meatball!
