For a light lunch, we love a warm quiche. Our favourite is spinach and tomato but you can also use mushroom, bacon, broccoli – anything you fancy! To a pastry base, pour on a mixture of eggs, cream and milk, seasoned with salt, pepper and nutmeg. Add your favourite toppings and crumble in cheddar. Bake for 50 minutes or until the top is golden and the filling is set.
